Who knew I had the guts to actually make something I just thought of the other day, especially when it's baking something. Well, this Banoffee Pie didn't exactly need any baking whatsoever. But hey, I now have a recipe to share!
I must say, however, it really could've been done better.
Banoffee Pie (banana + toffee) is an English dessert made from cream, bananas, toffee and boiled condensed milk. It's often considered a comfort food type of dessert and is popular because of its simplicity (Wikipedia, 2010).

Cooking Time: 1 hour 15 minutes
Serves: 6
Ingredients:
- 1 tin of 400g condensed milk
- 3-4 large bananas
- 1 pack of chocolate wheat biscuits or digestive biscuits
- 75g of melted butter
- 300ml whipping cream
- chocolate or chocolate powder
Method:
- To caramelize the condensed milk, fill a pot with enough water to cover the tin of condensed milk by a few inches. Once the water boils, slowly put in the tin and cover the pot, leaving it to boil for 2 hours. Carefully remove the tin with a pair of thongs and set it aside to fully cool for at least an hour. If you're in Malaysia, that would probably take longer.
It's really important to allow the tin to cool. Otherwise, the contents may 'explode' when you try to open it. As a result, you may want to replace caramelized condensed milk with toffee syrup as a precaution. I did this, because I was lazy. Haha. - For the rest of the pie, start by crushing the biscuits with something like a rolling pin. Because I don't have a rolling pin, I used a wooden spoon lol.
- Pour the melted butter in and mix well. You don't need the biscuit bits to stick together, you actually want them crumbly.
- Transfer the mixture into a cake tin and spread out evenly. Put the cake tin into the fridge for 15minutes for the base to harden.
- Peel and slice the bananas. Open the can of caramelized condensed milk.
- After 15minutes, take the tin out of the fridge and pour the bananas on top of the biscuit base and flatten it out. Then, add the caramelized condensed milk on top of the banana layer and spread it out evenly.
- Put the tin back into the fridge to chill for another 20 - 30 minutes.
- Whip the cream using an electric mixer (or a fork :p) until stiff. Top this over the pie after the 20 - 30 minutes, then refrigerate it for another 20 - 30 minutes.
- After all the chilling and waiting, top the set banoffee pie with grated chocolate or chocolate powder. Be generous, not kiam siap!
Ah, I forgot to buy digestive biscuits when I went down to Woolies, and I didn't notice until I reached home. So what did I do? I took out a packet of my beloved Chocolate Wheaten biscuits from the stash cupboard. And I crushed them D: (see left picture) But at least YY complimented the result.
