Some Real Baking: Banana Bread #2


Okay, so we have a confession to make.

Banana bread #1 was quite a failure because its texture turned out to be too compact and hard, although it tasted fine. Also, it didn't rise properly because we ran out of self-raising flour - so we 'made' our own self-raising flour by following the instructions from here. It's perfectly normal okay, many people in Yahoo! Answers do that. However, we did still get positive feedback from all you supportive friends out there. Kudos to you! Even though it was probably because we managed to distract your attention from the failed product with the more attractive ice cream and whipped cream. Haha, you all also fail.

In our dissatisfaction, we decided to try again! And this time it turned out much better! We used a slightly different recipe, but added some secret chocolatey ingredient: Tim Tam Crush in Double Choc Crunch! Woohoo!

Preparation Time: 20 minutes
Cooking Time: 50 minutes
Serves: 6

Ingredients:
  • 1 cup (150g) plain flour
  • 1/2 cup (75g) self-raising flour
  • 1/2 tsp baking powder
  • 1 tsp ground cinnamon
  • 1 cup brown sugar
  • 1 tsp vanilla extract
  • 2 eggs
  • 125g melted butter
  • 3 large over-ripe bananas
  • Secret ingredient: 1 pack of Tim Tams
Method:
  1. Preheat the oven to 180°C. Grease the base and side of a tin and line it with baking paper. Ideally, you should use a loaf tin since it's banana bread. But we used a square cake tin (because we don't have a loaf tin :/).
  2. In Bowl 1, sift and mix the dry ingredients together - flours, baking powder, cinnamon, and brown sugar. Don't forget the secret ingredient!
  3. In Bowl 2, whisk the wet ingredients together - eggs, vanilla extract, and butter. You can use a whisk or an electric mixer, but it should be very lightly whisked. The colour of the mix should be pale yellow and have some bubbles haha (like in the picture).
  4. Mash the bananas and add them into Bowl 2. Mix well.
  5. Slowly add the contents of Bowl 2 into Bowl 1 and mix well. Use a spatula or a wooden spoon to fold the ingredients into each other. In the process, add the raisins in as well. I think we sorta overmixed at this step, the batter looks too smooth.
  6. Spoon batter into tin and bake for 50minutes. Poke it with a toothpick/skewer to check! Let it cool first before removing from tin.
  7. Serve with maple syrup and butter for breakfast, or ice cream for dessert. Fat fat!
